Coconut banana pikelets

Transport yourself to a tropical paradise with coconut and banana pikelets.
Ingredients:
  • 150.00 gm self-raising flour
  • 40.00 gm caster sugar
  • 187.50 ml coconut-flavoured evaporated milk (see note)
  • olive oil cooking spray
  • 1 large banana, cut into 12 slices
  • Low-fat vanilla ice-cream, to serve
Instructions:
  • In a large bowl, sift the flour and sugar together. Create a well in the center. In a separate jug, whisk the milk and egg together. Pour the milk mixture into the flour mixture, and whisk until smooth.
  • Prepare a large, non-stick frying pan by spraying it with oil and heating it over medium heat. Spoon 4 heaped tablespoons of batter into the pan and top each with a slice of banana. Cook for about 1 minute until bubbles form on the surface, then flip and cook for another minute until golden and cooked through. Transfer to a plate and cover with foil to keep warm. Repeat the process with the remaining batter and banana slices to make a total of 12 delicious pikelets.
  • Arrange the pikelets with the banana side facing up on plates and serve them with a scoop of ice cream.
