Zucchini Chocolate Chip Pancakes

Revamp your morning routine with zucchini and chocolate chip breakfast pancakes.
Ingredients:
  • 2 cups Original Bisquick™ mix
  • 2 cups shredded zucchini
  • 1/2 cup chocolate chips
  • 1 tablespoon packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon ground nutmeg
  • 2 eggs
  • Maple syrup, if desired
Instructions:
  • Combine all ingredients in a large bowl, stirring until just mixed, then add the syrup.
  • Preheat a 10-inch or larger skillet or griddle over medium heat (325°F) and lightly brush with oil.
  • Ladle slightly less than 1/4 cup of batter onto a hot skillet. Cook until golden brown underneath and bubbles appear on top, for about 3 minutes. Flip and cook until golden brown, for about 2 minutes. Transfer to a plate and continue with the rest of the batter.
  • Drizzle with indulgent maple syrup before serving warm.
