Quickly bake indulgent zucchini chocolate chip cupcakes.
Ingredients:
  • 0.5 cup vegetable oil
  • 0.25 cup milk
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 0.75 cup white sugar
  • 0.5 cup mini chocolate chips
  • 1 teaspoon baking soda
  • 1 cup shredded zucchini
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and line a 12-cup cupcake pan with paper liners.
  • Combine vegetable oil, egg, milk, lemon juice, and vanilla extract in a bowl and whisk until smooth.
  • In a separate bowl, mix flour, sugar, chocolate chips, baking soda, cinnamon, and salt. Gently fold in the oil mixture and stir in zucchini. Spoon batter into the prepared pan.
  • Bake in the preheated oven for about 20 minutes or until a toothpick inserted into the center comes out clean. Transfer to a wire rack to cool.
