Moist zucchini muffins with chocolate chips and walnuts, perfect for any time of day.
Ingredients:
  • 1.5 cups all-purpose flour
  • 0.75 cup white sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.5 cup vegetable oil
  • 0.25 cup milk
  • 1 tablespoon lemon juice
  • 1 cup shredded zucchini
  • 0.5 cup miniature semisweet chocolate chips
  • 0.5 cup chopped walnuts
Instructions:
  • Assemble all ingredients.
  • Preheat the oven to 350°F (175°C) and prepare a 12-cup muffin tin by greasing it or lining the cups with paper liners.
  • In a large bowl, mix together flour, sugar, baking soda, cinnamon, and salt.
  • Combine oil, milk, egg, lemon juice, and vanilla extract in a separate bowl and whisk until smooth.
  • Combine the wet ingredients with the dry ingredients until just moistened. Gently mix in the zucchini, chocolate chips, and walnuts.
  • Fill the prepared muffin cups with batter, leaving about 1/3 of the space at the top.
  • Bake in the preheated oven for 20 to 25 minutes until the tops spring back when lightly pressed. Then let them cool briefly in the tin before transferring to a wire rack to cool completely.
