Chocolate chip zucchini mini muffins with applesauce - a delightful lunchbox treat kids will love.
Ingredients:
  • 2 (1 ounce) squares unsweetened chocolate
  • 2 cups grated zucchini
  • 1 cup unsweetened applesauce
  • 0.75 cup egg substitute
  • 1.5 cups white sugar
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.75 (1 ounce) square semisweet chocolate chips
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), then generously coat 2 mini muffin tins with cooking spray.
  • In a large microwave-safe glass or ceramic bowl, melt the chocolate squares in 15-second intervals, stirring after each melting for about 1 minute. Mix in zucchini, applesauce, egg substitute, and vanilla extract, beating well until fully combined.
  • In a large bowl, combine sugar, all-purpose flour, whole wheat flour, baking soda, baking powder, cinnamon, and salt. Stir in the chocolate mixture until just combined, then gently fold in the chocolate chips.
  • Divide the batter evenly among the muffin tins.
  • Bake until a toothpick inserted in the center comes out clean, around 15 minutes in the preheated oven.
