Indulgent low-fat chocolate pudding cake that's quick to prepare. Perfect with ice cream or whipped cream!
Ingredients:
  • 1 cup all-purpose flour
  • 0.75 cup white sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 0.25 teaspoon salt
  • 0.5 cup 2% low-fat milk
  • 1 teaspoon vanilla extract
  • 1 cup firmly packed brown sugar
  • 0.25 cup unsweetened cocoa powder
  • 1.75 cups boiling water
Instructions:
  • Preheat oven to 350°F (175°C).
  • In a 9-inch square baking pan, mix flour, white sugar, cocoa powder, baking powder, and salt until well combined. Stir in milk, oil, and vanilla extract until the batter is smooth.
  • Combine brown sugar and cocoa powder in a small bowl, then sprinkle over the batter. Gently pour boiling water over the top without stirring.
  • Bake until the cake springs back when lightly touched in the center, approximately 40 minutes in the preheated oven.
