Garam masala-infused chocolate and peanut butter chip muffins for a delightful twist.
Ingredients:
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon garam masala
  • 3 eggs
  • 2 cups white sugar
  • 1 cup applesauce
  • 2 cups grated unpeeled zucchini
  • 0.33333334326744 cup unsweetened cocoa powder
  • 1.5 teaspoons vanilla extract
  • 0.5 (11 ounce) package peanut butter and milk chocolate chips
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C), then generously grease 24 muffin cups or line them with paper liners.
  • Combine flour, baking soda, baking powder, salt, and garam masala in a bowl; mix well and leave aside. In a separate bowl, whisk eggs, sugar, and applesauce until creamy. Mix in zucchini, cocoa powder, and vanilla extract. Gradually fold in the flour mixture until just combined. Gently incorporate peanut butter and chocolate chips into the zucchini batter. Fill muffin cups 2/3 full with the batter.
  • Bake in a warm oven until a toothpick inserted in the center comes out clean, for 20 to 25 minutes. Let it cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
