Fall-themed sweet potato pancakes are a delicious twist on traditional pumpkin pancakes for breakfast.
Ingredients:
  • 2.5 cups baking mix (such as Bisquick ®)
  • 3 tablespoons brown sugar
  • 2.5 teaspoons pumpkin pie spice
  • 1.75 cups milk
  • 1 cup mashed sweet potatoes
  • 2 tablespoons white vinegar
  • 2 tablespoons vegetable oil
  • 2 tablespoons vegetable oil, or as needed
Instructions:
  • In a large bowl, combine baking mix, brown sugar, and pumpkin pie spice. In a separate bowl, whisk together milk, mashed sweet potatoes, white vinegar, and 2 tablespoons vegetable oil until smooth. Gradually mix the wet ingredients into the dry mixture until a smooth batter forms.
  • Preheat a generous amount of oil in a large skillet over medium heat until hot. Pour 1/4 cup of batter onto the skillet, ensuring enough space between each pancake. Cook until golden brown, approximately 3 to 5 minutes per side. Repeat until all batter is used.
