Deliciously spiced sweet potato pancakes will make you forget about regular pancakes.
Ingredients:
  • 0.75 pound sweet potatoes
  • 1.5 cups all-purpose flour
  • 3.5 teaspoons baking powder
  • 1 teaspoon salt
  • 0.5 teaspoon ground nutmeg
  • 1.5 cups milk
  • 0.25 cup unsalted butter, melted
  • 2 large eggs, beaten
Instructions:
  • 1. In a medium saucepan, bring lightly salted water to a boil. Cook sweet potatoes until tender yet slightly firm, for about 15 minutes. Drain the sweet potatoes, then promptly place them in cold water to make peeling easier. Drain once more and peel off the skins.
  • In a medium bowl, combine flour, baking powder, salt, and nutmeg by sifting them together.
  • Chop sweet potatoes, then transfer to a bowl and mash. Add milk, melted butter, and egg. Slowly incorporate flour mixture until fully combined.
  • Prepare your griddle by giving it a light coating of grease, then preheat it over medium-high heat.
  • In batches, spoon heaping tablespoonfuls of batter onto the hot griddle. Cook until bubbles form on the surface, about 3 to 4 minutes. Flip and cook until golden brown, approximately 2 to 3 more minutes on the other side.
