Try these quick and delicious sweet potato pancakes using Bisquick® mix for a satisfying breakfast in just 20 minutes!
Ingredients:
  • 1 cup Bisquick™ Original baking mix
  • 1/2 cup milk
  • 4 eggs
  • 3 cups shredded peeled sweet potatoes
  • 1/4 cup chopped pecans
Instructions:
  • Preheat a griddle or skillet and grease if needed. Mix baking mix, milk, and eggs in a large bowl until well combined. Gently fold in sweet potatoes and pecans.
  • Ladle 1/4 cup of batter onto the hot griddle and gently spread it to create a 4-inch pancake.
  • Cook the pancakes for about 3 minutes until the edges are dry and the bottoms are golden brown. Flip and cook for an additional 2 minutes until golden.
