Ingredients:
  • 250g (1 punnet) small strawberries, hulled
  • 20.00 gm caster sugar
  • 20.00 gm water
  • 21.00 gm lemon juice
  • 4 waffles
  • 150mls thick cream, to serve
Instructions:
  • Cut half of the strawberries into quarters and transfer them to a small bowl. Sprinkle with 1 teaspoon of caster sugar and let it sit.
  • Dice the remaining strawberries and mix them with water and the remaining 3 teaspoons of caster sugar in a small saucepan. Stir over medium heat until it comes to a simmer.
  • Cook for 3 minutes until soft. Remove from heat, strain the strawberry mixture through a sieve into a bowl using a wooden spoon. Stir in the lemon juice to make the strawberry sauce.
  • Toast the waffles according to the package instructions until they are golden brown.
  • Place warm waffles on plates, generously spoon cream on top, add reserved strawberries, and drizzle with strawberry sauce.
