Indulge in a luscious treat of coconut ice cream, chocolate-coated waffles, and strawberry jam sandwich. Delicious!
Ingredients:
  • 500ml Brand Vanilla Ice Cream, softened
  • 200ml can coconut cream
  • 275g pkt Belgium Style Waffles, split horizontally
  • 52.80 gm strawberry jam
  • 225g chocolate melts
  • 10.40 gm shredded coconut
  • Fresh strawberries, to serve
Instructions:
  • Place a sheet of plastic wrap in a 16cm x 26cm rectangular slice pan to line it.
  • Mix together the ice-cream and coconut cream in a large bowl, then transfer the mixture to the prepared pan. Utilize the back of a spoon to create a smooth top. Cover with foil and let it sit in the freezer for 3 hours or until firm.
  • Spread jam on half of the waffles. Use a round cutter to cut five discs from the ice-cream. Place the ice-cream discs on top of the jam-covered waffle bases and then top with the remaining waffle halves. Place on a baking tray lined with baking paper and freeze until needed.
  • Melt the chocolate in a heatproof bowl over a pan of simmering water without letting the bowl touch the water. Let it cool for 5 mins, then transfer it to a sealable plastic bag. Cut a small corner. Drizzle the melted chocolate over half of each sandwich, sprinkle with coconut, and freeze on a tray until set. Serve with strawberries.
