Celebrate Australia Day with a classic national dish.
Ingredients:
  • 3 eggs
  • 100g caster sugar
  • 100g self-raising flour
  • 10.00 gm cornflour
  • Desiccated coconut, to sprinkle
  • 250ml thickened cream
  • 12.00 gm icing sugar mixture
  • 90g jam
  • 100g shredded coconut
  • 230g icing sugar mixture
  • 50g cocoa powder
  • 20g butter
  • 80ml milk
Instructions:
  • Preheat the oven to 200°C. Prepare a 25x30cm swiss roll pan by lining it with baking paper, leaving some overhang on the sides.
  • Whip eggs with an electric mixer until thick and pale. Gradually add sugar, 1 tablespoon at a time, and whisk until sugar dissolves. Sift flour and cornflour over the egg mixture and gently fold until just combined. Pour into prepared pan and bake for 10 minutes or until sponge is dry to the touch. Place a sheet of baking paper on a clean surface, sprinkle with desiccated coconut. Invert hot cake onto paper, remove lining, and carefully roll up cake from one short end. Roll in a clean tea towel and let it cool completely.
  • Whip the cream and icing sugar mixture with an electric mixer until stiff peaks form.
  • Spread a layer of jam evenly over the unwrapped sponge. Add a layer of cream, making sure to leave a 3cm border. Roll up the sponge again using the paper to guide you. Place the roll on a wire rack over an oven tray.
  • For the chocolate icing, mix icing sugar, cocoa powder, butter, and milk in a heatproof bowl. Place the bowl over simmering water, stir until smooth and runny (about 3-4 minutes). Pour over the sponge roll evenly. Spread coconut on a tray, roll the sponge in it to coat, and let it set for 30 minutes. Slice and serve.
