Try a fun twist with Lamington Chocolate Crackle Sushi!
Ingredients:
  • 105g (3 cups) rice bubbles
  • 120g (2 cups) vanilla marshmallows
  • 50g butter
  • 105g (1/3 cup) raspberry jam
  • 180g dark chocolate, chopped
  • 35g (1/3 cup) desiccated coconut
Instructions:
  • Prepare a 24cm x 33.5cm baking tray by greasing it lightly and lining the base and sides with baking paper, making sure to extend the paper 5cm above the edges. Next, place the rice bubbles in a heatproof bowl.
  • In a saucepan over medium heat, melt marshmallows and butter together, stirring occasionally for 8-10 minutes until smooth. Combine with rice bubbles. Quickly transfer mixture onto a prepared tray, pressing it evenly with damp hands. Top with jam, leaving a 1cm border, then let it set for 5 minutes before serving.
  • Carefully lift the mixture from the pan using parchment paper. Roll it tightly from one long side to create a log shape, using the parchment paper to assist you. Wrap the log in baking paper and refrigerate for 2 hours or until it is firm.
  • Place the decadent chocolate in a microwave-safe bowl. Heat on HIGH for 1-2 minutes, stopping to stir until it becomes a luxurious, velvety consistency.
  • Transfer the roll from the parchment paper to a wire rack set over a tray. Drizzle the melted chocolate over the roll until completely covered. Let it sit for 2 minutes to allow the chocolate to set, then sprinkle with coconut. Chill in the refrigerator for 20 minutes until fully set.
  • Trim the ends of the roll and slice it into 1cm thick pieces. Allow the slices to come to room temperature before serving.
