Elegantly-crafted and simple dessert to impress effortlessly!
Ingredients:
  • 50g dark chocolate, chopped
  • 415g can stoneless black cherries in syrup
  • 20.00 gm caster sugar
  • 2 tsp cherry brandy (optional)
  • 126.25 gm thickened cream
  • 8 lamingtons
Instructions:
  • In a heatproof, microwave-safe bowl, microwave the chocolate on medium (50%) power for 1 to 2 minutes. Stir every 30 seconds with a metal spoon until the chocolate is melted and smooth. Let it cool before using.
  • Strain cherries, saving the syrup. Combine syrup, sugar, and brandy (if desired) in a saucepan over medium heat. Stir for 3 minutes until sugar dissolves without boiling. Increase heat and bring to a boil. Reduce heat and simmer for 5 to 6 minutes until slightly thickened. Stir in half the cherries, then remove from heat and chop the remaining cherries.
  • With an electric mixer, whip the cream until soft peaks form. Gently fold in the cooled chocolate and chopped cherries to create a luscious cream mixture.
  • Cut 1 lamington horizontally and place the base on a plate. Spread with 2 level tablespoons of cream mixture. Top with the other half of the lamington. Repeat with remaining lamingtons and cream mixture. Finish by spooning over the syrup mixture. Serve and enjoy!
