Ingredients:
  • 200 g quality dark chocolate (70%)
  • 1 x 400 g tin of black pitted cherries in syrup
  • 200 ml double cream
  • 4 large free-range eggs
  • 2 tablespoons golden caster sugar
Instructions:
  • - Melt the chocolate in a heatproof bowl over simmering water, then cool for 10 minutes. - Simmer cherries and syrup until thick, then set aside. - Whip cream to soft peaks. - Combine egg yolks, sugar, and cream. - Beat egg whites with salt until stiff. - Fold chocolate into cream, then gently fold in egg whites. - Divide mousse into glasses, layering with cherries, syrup, and cherries on top.
