Black cherry mousse elevated by rich syrup for a sophisticated dessert.
Ingredients:
  • 100g dark chocolate, chopped
  • 100g milk chocolate, chopped
  • 166.65 gm thickened cream
  • 2 eggs, separated
  • 40.00 gm caster sugar
  • Drained stoneless black cherries in syrup, to serve
  • Double thick cream, to serve
  • Grated dark chocolate, to serve
Instructions:
  • In a microwave-safe bowl, heat the chocolate on medium (50%) power for 2 to 3 minutes, pausing to stir with a metal spoon halfway through, until it is smooth. Allow it to cool for 10 minutes.
  • Beat cream with an electric mixer until soft peaks form, about 2 to 3 minutes.
  • Combine the egg yolks and half of the cream with the chocolate mixture. Stir well before gently folding in the remaining cream. Remember to wash and dry the beaters and bowl for later use.
  • With an electric mixer, whip egg whites until soft peaks form, about 3 to 4 minutes. Add sugar and beat until glossy. Gently fold half of the egg white mixture into the chocolate mixture, then fold in the rest. Divide the mixture into 6 x 1/3 cup-capacity glasses and refrigerate for 3 to 4 hours until set. Top with a dollop of cream, cherries, and a sprinkle of grated chocolate before serving.
