Choc cherry steamed pudding

Decadent chocolate-cherry steamed pudding for a delightful dessert or indulgent snack.
Ingredients:
  • 150g unsalted butter, melted, plus extra for greasing
  • 180.00 gm brown sugar
  • 2 eggs
  • 200g dark chocolate, melted, cooled
  • 128.75 gm milk
  • 187.50 gm self-raising flour
  • 32.50 gm cocoa powder
  • 3 x 52g Cherry Ripe bars
  • Cocoa, for dusting
  • Thick cream, to serve
Instructions:
  • Coat an 8-cup pudding bowl generously with extra butter and place a circle of baking paper at the base.
  • With an electric mixer, blend butter and sugar until creamy. Incorporate eggs one by one, beating thoroughly after each addition. Introduce cooled chocolate and milk on low speed until well combined. Gradually sift in flour and cocoa. Coarsely chop Cherry Ripe bars, fold into batter until just mixed. Pour into prepared basin.
  • Prepare the basin by lining it with greased baking paper and foil, then secure with kitchen string. Place the pudding on a trivet in a large stock pot and fill with hot water two-thirds up the side of the basin. Simmer covered for 2.5 hours until a skewer comes out clean. Allow to sit for 10 minutes before inverting.
  • Sprinkle pudding with cocoa powder and serve at room temperature in wedges garnished with a dollop of thick cream.
