Choc-cherry layer cake

Indulge in a quick and easy sweet treat for instant satisfaction.
Ingredients:
  • 1/2 x 180g block dark chocolate
  • 40.40 gm thickened cream
  • 3 x 62g tubs chocolate mousse
  • 415g can stoneless black cherries
  • 380g double unfilled chocolate sponge cake
  • 40.00 ml roasted coconut chips
  • 126.25 gm thickened cream, whipped, extra
Instructions:
  • Combine the chocolate and cream in a microwave-safe bowl. Microwave on HIGH, stirring with a metal spoon, until melted and smooth, about 30 seconds to 1 minute. Set aside.
  • Whisk the mousse in a bowl until smooth, about 30 seconds. Drain the cherries, saving 1/3 cup syrup. Finely chop half of the cherries.
  • With a sharp serrated knife, carefully halve each sponge cake. Arrange one cake half on a serving plate and generously brush it with the cherry syrup. Spread 1/3 of the mousse mixture and sprinkle 1/3 of the chopped cherries on top. Repeat these layers until you reach the final layer of cake.
  • Drizzle cake with chocolate mixture, sprinkle with coconut chips and cherries. Serve alongside whipped cream.
