Choc-cherry hot cross bun pudding

Elevate Easter with a luxurious chocolate-cherry hot cross bun pudding!
Ingredients:
  • 9 Chocolate Hot Cross Buns*, split
  • 40g butter, softened
  • 160g cherry jam
  • 150g canned cherries
  • 8 Free Range Eggs, lightly whisked
  • 375ml milk
  • 185ml thickened cream
  • 110g caster sugar
  • 40.00 ml flaked almonds, toasted
Instructions:
  • Preheat your oven to 160°C and lightly grease a 12-cup (3L) ovenproof dish. Spread the cut side of each bun half with butter, followed by a layer of jam.
  • Place the bottom halves of the buns, with the jam facing up, in the pan. Next, add the top halves of the buns with the cross side facing up. Finish by sprinkling cherries over the top.
  • Combine egg, milk, cream, and sugar in a large bowl and whisk until smooth. Strain the mixture through a fine sieve into a jug. Evenly pour the mixture over the buns and let it sit for 15 minutes to soak up all the flavors.
  • Position the dish in a large roasting pan and fill it halfway up the sides with boiling water. Bake for 35-40 minutes or until the custard is just set. Allow it to cool slightly for 5 minutes, then garnish with almonds.
