Festive cherry trifle embodies Christmas in every bite.
Ingredients:
  • 85g Original Port Wine jelly crystals
  • 85g Original Strawberry jelly crystals
  • 8 lamington fingers, cut into thirds
  • 62.50 ml Kahlua coffee liqueur
  • 415g can stoneless black cherries in syrup, drained
  • 505.00 gm thickened cream
  • 6.00 gm icing sugar mixture
  • dark chocolate curls (see note), to serve
Instructions:
  • In a heatproof jug, combine the port wine jelly crystals with 1 cup of boiling water, stirring until dissolved. Mix in 200ml of cold water, then transfer the mixture to a bowl. Chill in the refrigerator for 1 hour and 30 minutes until it starts to set to a thick, syrupy consistency. Repeat the process with the strawberry jelly crystals.
  • Layer lamington pieces in elegant serving glasses. Generously drizzle with your favorite liqueur. Spoon luscious port wine jelly over the top. Finish by garnishing with sweet cherries.
  • In a bowl, combine cream and icing sugar. Use an electric mixer to whip until soft peaks form. Spread half of the cream mixture over the trifles. Layer with strawberry jelly, then the remaining cream mixture. Chill in the refrigerator for an hour. Finish by sprinkling chocolate on top before serving.
