Strawberry-swirl meringue nests

Fluffy pink meringue swirls - quick, easy, and irresistibly beautiful!
Ingredients:
  • 2 egg whites
  • 107.50 gm caster sugar
  • 1 tsp strawberries and cream essence
  • Pink gel food colouring
  • Assorted sprinkles, to decorate
Instructions:
  • Preheat your oven to 150C (130C fan-forced) and line a large baking tray with baking paper.
  • Using an electric mixer, whip egg whites until soft peaks form. Slowly add sugar, one tablespoon at a time, until sugar is fully dissolved. Stir in essence and beat until well combined.
  • Create pink stripes in the piping bag using a skewer. Fill the piping bag with meringue and pipe onto tray, forming nests that are 6cm in diameter and 4cm apart. Sprinkle decorations on top.
  • Place in oven and reduce temperature to 130C/110C fan-forced. Bake for 30 to 35 minutes until just firm to touch. Turn off oven and allow to cool completely with door ajar. Serve.
