Make easy strawberry swirl pavlovas in no time.
Ingredients:
  • 250g fresh strawberries, hulled, quartered
  • 150ml thickened cream
  • 150g mascarpone
  • 1 tsp vanilla bean paste
  • 8 Brand Make At Home Meringue Nests
  • Strawberries, extra, to decorate
  • Mint leaves, extra, to decorate
Instructions:
  • In a bowl, combine quartered strawberries with 1 tablespoon of caster sugar. Let sit for 30 minutes until they start to release their juices. Transfer strawberries to a food processor and pulse until coarsely chopped.
  • In a bowl, combine cream, mascarpone, vanilla bean paste, and remaining sugar. Whip with an electric beater until soft peaks form. Carefully fold in the strawberries, ensuring not to overmix.
  • Place the meringue nests elegantly on a serving platter. Spoon the strawberry cream evenly onto each meringue, then garnish with fresh strawberries and mint leaves.
