Strawberry muffins

Ingredients:
  • 400g plain flour, sifted
  • 165g caster sugar
  • 10.00 gm baking powder
  • Grated zest of 1 orange
  • 250g strawberry
  • 300ml buttermilk
  • 80g unsalted butter, melted, cooled
  • Icing sugar (optional), to dust
Instructions:
  • Preheat the oven to 200°C. Line a 12-hole muffin pan with paper cases. Combine dry ingredients in a bowl, gently fold in berries with a wooden spoon. In a separate bowl, whisk together eggs, buttermilk, and butter, then add to the dry ingredients. Mix until just combined - be careful not to overmix. Pour the batter into the pans and bake for 15-18 minutes until the muffins are risen and pale golden. Allow them to cool before dusting with icing sugar, if desired.
