Strawberry cheesecake muffins

Indulge in oversized strawberry muffins for a delicious treat!
Ingredients:
  • 125g unsalted butter, softened
  • 250g cream cheese
  • 330g caster sugar
  • 4 eggs
  • 4.40 gm vanilla extract
  • 300g self-raising flour
  • 300g strawberries, sliced, plus extra to serve
  • Icing sugar, to dust
  • 150g cream cheese
  • 50g icing sugar
  • 125ml thickened cream
  • 2.20 gm vanilla extract
Instructions:
  • Preheat the oven to 180°C and place paper cases in 12 jumbo muffin pans.
  • In a bowl, combine all ingredients and beat with electric beaters until thick and well mixed. Refrigerate until needed.
  • Start by combining butter, cream cheese, and caster sugar in the bowl of an electric mixer. Beat until pale. Next, add the eggs one at a time, mixing after each addition until just combined. Mix in the vanilla, then gently fold in the flour and a pinch of salt. Toss the sliced strawberries with a bit of extra flour and gently stir into the batter. Scoop the mixture into muffin cases and bake for 25-30 minutes until golden. Once baked, allow them to cool before enjoying.
  • Sprinkle with powdered sugar and enjoy with additional strawberries and the creamy cheesecake topping.
