Strawberry-cream cheese filled muffins - a delightful dessert surprise!
Ingredients:
  • 0.5 (8 ounce) package cream cheese, softened
  • 0.25 cup confectioners' sugar
  • 2.5 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 egg
  • 1.25 cups milk
  • 0.5 cup brown sugar
  • 0.33333334326744 cup butter, melted
  • 1 teaspoon grated lemon zest
  • 0.25 cup strawberry jam
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and prepare a muffin tin by greasing 12 cups or lining them with paper liners.
  • Blend cream cheese and confectioners' sugar until perfectly smooth; set aside.
  • Combine all-purpose flour, baking powder, and salt in a large mixing bowl. In a separate bowl, whisk together egg, milk, brown sugar, butter, lemon zest, and vanilla extract. Gently fold the egg mixture into the dry ingredients until just combined.
  • Divide the batter evenly among the muffin cups. Add a dollop of cream cheese mixture and a spoonful of jam on top of each. Cover with the rest of the muffin batter.
  • Bake in a preheated oven until golden, about 20 minutes. Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely. Store in an airtight container.
