Strawberry cheesecake tacos recipe

Elevate Taco Tuesday with creamy strawberry cheesecake-filled tacos for a delightful and impressive treat to share with loved ones.
Ingredients:
  • 40g butter, melted
  • 70.95 gm caster sugar
  • 1.25 gm ground cinnamon
  • 250g fresh strawberries, hulled, finely chopped
  • 4 flour tortillas
  • 230g tub Classic Icing
  • 10.40 gm shredded coconut, toasted
Instructions:
  • Preheat your oven to 180C/160C fan forced. Cut 3-4 discs from each tortilla using an 8cm-diameter pastry cutter. Combine sugar and cinnamon on a plate and sift.
  • 1. Coat 6 tortilla discs with butter, then coat them with the sugar mixture and place them between the holes of an upturned muffin pan. Bake until golden, approximately 8 minutes. Let cool for 3 minutes before transferring to a wire rack to cool completely. Repeat the process to make a total of 12 taco shells.
  • Transfer the icing into a piping bag fitted with a small tip, gently squeeze the bag to control the flow. Fill each taco shell with the icing. Garnish with strawberry slices and a sprinkle of coconut before serving.
