Ingredients:
  • 0.5 (8 ounce) package cream cheese, softened
  • 0.5 cup diced fresh strawberries
  • 1 tablespoon honey
  • 1 cup chopped fresh strawberries
  • 1 tablespoon white sugar
  • 0.75 cup white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 3 eggs, lightly beaten
  • 0.25 cup vegetable oil
  • 1 teaspoon grated orange zest
Instructions:
  • In a food processor, blend creamy cream cheese with fresh strawberries and sweet honey until silky. Store the luscious mixture in an airtight container and chill.
  • Preheat the oven to 375 degrees F (190 degrees C) and prepare a 12-cup muffin tin by spraying it with cooking spray or lining it with paper muffin liners.
  • Combine fresh, ripe strawberries and a tablespoon of sugar in a bowl, allowing them to macerate for 10 minutes.
  • Combine flour, 3/4 cup sugar, baking powder, and salt in a large bowl. In a separate bowl, whisk together eggs, milk, vegetable oil, and orange zest until smooth. Gently fold the egg mixture into the flour mixture until just combined.
  • Gently fold drained strawberries into the batter and distribute evenly into the prepared muffin cups.
  • Bake in the preheated oven for 20-25 minutes until a toothpick inserted in the center comes out clean. Serve warm or cooled with the strawberry cream cheese spread.
