Delicious strawberry cupcakes bursting with real strawberries!
Ingredients:
  • 10 tablespoons butter, room temperature
  • 0.75 cup white sugar
  • 3 eggs
  • 1 teaspoon strawberry extract
  • 1.75 cups self-rising flour
  • 0.25 teaspoon salt
  • 0.25 cup finely chopped fresh strawberries, drained
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) and prepare a 12-cup cupcake pan by greasing it or lining it with paper liners.
  • In a big bowl, mix the butter and sugar until creamy. Add the eggs one at a time, then mix in the strawberry extract. Mix the self-rising flour and salt; fold into the batter until just combined. Gently fold in the strawberries. Divide the batter evenly into the prepared cups.
  • Bake in the preheated oven for 20-25 minutes until the tops spring back when lightly pressed. Cool in the pan on a wire rack, then transfer cupcakes to a serving platter and frost with your favorite frosting.
