Strawberry cupcakes with creamy cheese frosting topped with fresh strawberry slices.
Ingredients:
  • 8 large fresh strawberries, or as needed
  • 2 eggs
  • 1 cup white sugar
  • 0.33333334326744 cup vegetable oil
  • 0.5 teaspoon lemon zest
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt
  • 3 tablespoons instant vanilla pudding mix
  • 1 drop red food coloring, or as needed
  • 0.75 cup cream cheese, softened
  • 2 tablespoons butter, softened
  • 0.5 cup confectioners' sugar
  • 3 large fresh strawberries, sliced
Instructions:
  • Preheat your oven to a toasty 325 degrees Fahrenheit (165 degrees Celsius). Grease cupcake cups with cooking spray or line them with cupcake liners for easy baking.
  • Blend 8 strawberries in a blender until smooth. Strain the puree to remove seeds. Set aside approximately 3/4 cup of strawberry puree.
  • Combine eggs, white sugar, vegetable oil, vanilla extract, lemon zest, and strawberry puree in a large bowl until smooth. Add flour, baking powder, salt, vanilla pudding mix for moisture, and red food coloring to achieve the desired pink color. Fill cupcake cups 2/3 full with batter.
  • Bake in the preheated oven for around 23 minutes until the cupcakes have puffed up and a toothpick comes out clean when inserted in the center. Let the cupcakes cool for at least 10 minutes before adding frosting.
  • In a mixing bowl, use an electric mixer to blend cream cheese and butter until smooth. Add confectioners' sugar and 1/2 teaspoon vanilla extract for a lump-free icing. Ice each cupcake with around 2 tablespoons of frosting and garnish with a strawberry slice.
