Delicious homemade strawberry cupcakes with fresh ingredients like cake flour, eggs, milk, butter, and freeze-dried strawberries.
Ingredients:
  • 1.25 ounces freeze-dried strawberries
  • 0.75 cup all-purpose flour
  • 0.75 cup cake flour
  • 0.25 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1.3333333730698 cups white sugar
  • 0.5 cup unsalted butter, room temperature
  • 3 eggs, room temperature
  • 0.66666668653488 cup whole milk, room temperature
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare 20 cupcake liners in muffin tins.
  • Pulverize freeze-dried strawberries into a fine powder using a coffee grinder or food processor. Combine the strawberry powder with flours, baking powder, baking soda, and salt in a medium bowl, mixing well. Set aside.
  • In a large bowl, use an electric mixer to whip together the sugar and butter until fluffy and the color has lightened. Add the eggs one at a time, beating well after each addition. Mix in the vanilla until well incorporated.
  • Alternate adding the flour mixture and milk into the butter mixture until just combined. Divide the batter into the muffin cups.
  • Bake in the preheated oven for 16 to 18 minutes or until cupcakes spring back when touched gently with a fingertip or a toothpick inserted into the center comes out clean.
