"Enhance Christmas vegetables by keeping skins on for maximum flavor and customizing seasonings for a delicious and streamlined taste."
Ingredients:
  • 1 kg carrots
  • 2 clementines
  • ½ a bunch of fresh thyme (15g)
  • 1 kg parsnips
  • red wine vinegar
  • 1 handful of bay leaves
Instructions:
  • 1. Preheat the oven to 180°C/350°F/gas 4. 2. Scrub the carrots and arrange in a large roasting tray. 3. Drizzle with honey, 1 tbsp olive oil, and sprinkle a pinch of sea salt. 4. Squeeze clementine juice over the carrots and scatter thyme sprigs. 5. Scrub and trim the parsnips, then place in the tray with the carrots. 6. Drizzle with 1 tbsp red wine vinegar, 1 tbsp olive oil, and sprinkle with sea salt. 7. Tuck in bay leaves. 8. Gently toss each vegetable section and roast for 1 hour and 20 minutes until golden.
