Fruit and nut garden salad with sweet almonds and tangy vinaigrette.
Ingredients:
  • 1 cup slivered almonds
  • 0.5 cup white sugar
  • 0.5 cup olive oil
  • 0.25 cup distilled white vinegar
  • 2 tablespoons white sugar
  • salt and pepper to taste
  • 0.5 head iceberg lettuce - rinsed, dried, and chopped
  • 0.5 head leaf lettuce - rinsed, dried, and chopped
  • 1 cup chopped celery
  • 0.25 cup chopped fresh chives
  • 0.5 cup dried, sweetened cranberries
  • 0.5 cup mandarin orange segments, drained
  • 0.5 cup sliced fresh peaches
  • 0.5 cup diced mango
  • 0.5 cup chopped fresh strawberries
Instructions:
  • Cook the almonds and 1/2 cup sugar in a skillet over medium heat for about 5 minutes until the almonds are well-coated and lightly browned.
  • Combine the olive oil, vinegar, 2 tablespoons of sugar, salt, and pepper in a bowl. Allow the flavors to meld together.
  • Combine almonds, iceberg lettuce, leaf lettuce, celery, chives, cranberries, mandarin oranges, peaches, mango, and strawberries in a large bowl. Serve with your preferred amount of oil and vinegar dressing.
