Whip up a stunning pink strawberry frosting using fresh berries for a naturally sweet and colorful icing without gelatin.
Ingredients:
  • 1 cup fresh strawberries
  • 1 cup butter
  • 3.5 cups confectioners' sugar, sifted, divided
  • 1 teaspoon vanilla extract
Instructions:
  • Blend fresh, ripe strawberries until silky smooth in a blender.
  • In a saucepan over medium heat, simmer strawberry purée, stirring frequently, until reduced by half, for about 20 minutes. Remove from heat and let cool completely.
  • Using an electric mixer, whip butter in a bowl until it becomes light and fluffy. Add 1 cup of confectioners' sugar and continue to beat until well combined. Mix in 2 tablespoons of cooled strawberry purée and vanilla extract until just blended.
  • Incorporate 1 cup of confectioners' sugar until blended, followed by 2 tablespoons of strawberry purée. Repeat the process one more time.
  • Incorporate the remaining 1/2 cup confectioners' sugar into the mixture until fully combined.
