Quick and decadent chocolate chunk banana bread made in the microwave in minutes. Serve warm with a scoop of vanilla ice cream for a delightful treat!
Ingredients:
  • 1 medium overripe banana
  • 1 medium egg
  • 1 tablespoon unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon sugar
  • 1/4 cup ( g) all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • Pinch of salt
  • 1 ounce (30g) dark chocolate chunks, roughly chopped
  • Vanilla ice cream, for serving
Instructions:
  • Mash the banana in a small bowl with a fork until it reaches a pulp-like consistency.
  • Combine the egg, melted butter, and vanilla extract until the mixture is smooth.
  • Combine sugar, flour, baking powder, baking soda, pinch of salt, and dark chocolate. Gently mix until just combined, ensuring no dry flour pockets remain visible.
  • Microwave baking: Pour batter into a 12-ounce microwave-safe mug and microwave for 1 minute 30 seconds. Continue microwaving in 10-second intervals until the cake is fully cooked. The top should be sticky but not wet and the cake will rise significantly. Use a 1000-watt microwave, adjusting time as needed for your appliance.
