Low-carb banana bread served with chocolate ricotta is a delightful alternative.
Ingredients:
  • 320g self-raising flour
  • 2.50 gm bicarbonate of soda
  • 70g brown sugar
  • 100g walnuts, roughly chopped
  • 2 eggs, lightly beaten
  • 250ml milk
  • 250g fresh ricotta
  • 3 ripe lady finger bananas, mashed
  • 40.00 ml finely grated dark chocolate
  • Pinch ground cinnamon, to serve
  • Honey, to serve
Instructions:
  • Preheat your oven to 180°C while you prepare a 21cm x 9cm loaf pan by greasing and lining it. Mix flour, bicarbonate of soda, sugar, and walnuts in a bowl.
  • Combine eggs, milk, and banana with the dry ingredients. Transfer the mixture to a pan and bake for 45 minutes. Slice the baked mixture into 2cm-thick slices. Toast them under a grill until golden brown. Enjoy!
  • Mix together the ricotta, chocolate, and cinnamon until well combined. Spread a generous amount on the toast and then drizzle with honey for a decadent finish.
