Irresistibly moist banana loaf enhanced with Lotus cookie butter for the ultimate banana bread experience.
Ingredients:
  • cooking spray
  • 1 cup white sugar
  • 0.5 cup butter, softened
  • 6 ripe bananas, mashed
  • 2 eggs, beaten
  • 1.5 cups cake flour
  • 3 tablespoons cake flour
  • 0.5 teaspoon salt
  • 0.5 teaspoon vanilla extract
  • 0.5 cup European cookie spread (such as Biscoff®)
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease a loaf pan with cooking spray.
  • In a large bowl, cream together sugar and butter using an electric mixer until smooth. Add in mashed bananas and eggs; mix until well combined.
  • Combine 1 1/2 cups plus 3 tablespoons of cake flour, baking soda, and salt in a bowl. Add to the banana mixture and stir in the vanilla extract. Pour half of the batter into the pan.
  • Microwave the cookie spread until softened, around 20 seconds. Spread it over the batter in the pan. Top with the remaining banana batter and swirl with a knife for a decorative touch.
  • Bake in the preheated oven for 50 to 60 minutes until a toothpick comes out clean. Allow to cool in the pan for 5 minutes, then invert onto a wire rack. Cool for 10 to 15 minutes before serving.
