Moist and fluffy ricotta pancakes made easy with ricotta cheese and pantry staples. Pair with fresh berries for a perfect treat.
Ingredients:
  • 1 cup ricotta cheese plus
  • 2 tablespoons ricotta cheese
  • 0.5 cup skim milk
  • 2 eggs, separated
  • 0.75 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1 tablespoon canola oil, or as needed
Instructions:
  • Heat up your griddle to 325 degrees F (165 degrees C) or warm up a nonstick skillet over medium-low heat.
  • Combine ricotta cheese, milk, and egg yolks in a bowl and mix until smooth.
  • Combine flour, baking powder, and salt in a bowl, then gently mix in the ricotta mixture.
  • Froth up egg whites in a bowl, then gently fold them into the ricotta mixture.
  • Preheat griddle with 1 teaspoon canola oil, then pour 1/4 cup batter for each pancake. Cook until golden brown on both sides, about 1 to 2 minutes each side. Repeat with remaining batter, oiling griddle before each batch.
