Family heirloom banana cookie recipe, perfect for using ripe bananas. Moist and travel-friendly.
Ingredients:
  • 1.5 cups sifted all-purpose flour
  • 0.5 teaspoon baking soda
  • 1 teaspoon salt
  • 0.25 teaspoon ground nutmeg
  • 0.75 teaspoon ground cinnamon
  • 0.75 cup shortening
  • 1 egg
  • 1 cup mashed bananas
  • 1.75 cups quick cooking oats
  • 0.5 cup chopped nuts
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • Combine the flour, baking soda, salt, nutmeg, and cinnamon by sifting them together.
  • Combine the shortening and sugar until light and fluffy. Incorporate the egg, banana, oatmeal, and nuts, mixing until well combined.
  • Combine the dry ingredients thoroughly and spoon by teaspoonfuls onto an ungreased cookie sheet.
  • Preheat oven to 400 degrees F (200 degrees C). Bake for 15 minutes or until edges are lightly browned. Allow to cool on a wire rack, then store in a sealed container.
