Maple-Glazed Apple Cake

Celebrate fall with a cozy apple cinnamon cake - the perfect seasonal treat!
Ingredients:
  • 1 box Betty Crocker™ Delights Super Moist™ Spice Cake Mix
  • 1 1/2 cups chopped Honey Crisp apples
  • 1/2 cup chopped pecans
  • 3/4 cup milk
  • 3 eggs
  • 1/2 cup sour cream
  • 2 tablespoons granulated sugar
  • 2 apples, peeled cut into 8 slices
  • 1 tablespoon lemon juice
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 cups powdered sugar
  • 3 to 4 tablespoons milk
  • 1/2 teaspoon maple extract
Instructions:
  • Preheat your oven to 350°F. Prepare a 10-cup fluted tube cake pan by spraying it with nonstick baking spray and coating it with 2 tablespoons of granulated sugar, then shake off any extra sugar.
  • Combine spice cake mix, chopped apples, and pecans in a large bowl, making sure the apples and pecans are evenly coated. Let it sit for later.
  • Combine 3/4 cup milk, eggs, and sour cream in a separate bowl. Whisk until smooth, then pour into the spice cake mix and gently fold until just combined.
  • Transfer the batter into the prepared pan and bake for 35-40 minutes until a toothpick inserted comes out clean. Let the cake cool in the pan for 10 minutes, then invert it onto a wire rack to cool completely.
  • In a saucepan, combine sliced apples with lemon juice, brown sugar, cinnamon, and nutmeg. Toss to coat and let the flavors meld for 10 minutes.
  • Cook apples in a pan on medium heat for 15 minutes, stirring occasionally, until slightly softened and juices have thickened slightly. Remove from heat and let cool completely.
  • Prepare the luscious maple glaze by combining powdered sugar, 3 tablespoons of milk, and maple extract in a bowl. Whisk until velvety smooth.
  • Drizzle the luscious maple glaze over the chilled cake and generously crown it with slices of fresh apples. For an extra touch of indulgence, sprinkle any remaining chopped pecans on top.
