Indulge in Maple-Glazed Apple Pie Cookie Cups – a delightful fall treat made with simple ingredients like Sugar Cookie Mix and canned apple pie filling. These mini apple pies, topped with a rich brown-butter, maple glaze, are the perfect way to savor the flavors of autumn.
Ingredients:
  • Butter and egg called for on cookie mix pouch for drop cookies
  • 1 1/2 cups apple pie filling (from 21-oz can)
  • 1/2 cup butter
  • 2 tablespoons maple syrup
  • 1 1/2 cups powdered sugar
  • 2 tablespoons water
Instructions:
  • Preheat the oven to 375°F. Grease 18-24 regular-size muffin cups with shortening and lightly dust with flour.
  • Combine cookie mix, 1/2 cup softened butter, and egg in a large bowl until a soft dough forms. Press a heaping tablespoon of dough firmly into the bottom of each muffin cup.
  • Dice apple pie filling finely and spoon a heaping 2 teaspoons into the center of each cookie cup. Bake for 14 to 17 minutes, or until the cookie edges turn a deep golden brown.
  • Allow the cookies to cool in the pan on a rack for 10 minutes. Use a metal spatula to gently release each cookie cup from the edges, then leave them to cool in the pan for another 20 minutes. Finally, transfer the cookies from the muffin cups to the cooling rack to cool completely.
  • In a saucepan, melt 1/2 cup of butter until it turns golden brown. Take it off the heat and mix in maple syrup. Gradually stir in powdered sugar until a glaze forms. Thin out the glaze by adding up to 2 tablespoons of water. Drizzle the glaze over cooled cookies using a spoon. Enjoy!
