Elevate BBQ salmon with mild Caribbean seasoning for a special twist.
Ingredients:
  • 3 shallots, trimmed, chopped
  • 1 long fresh green chilli, seeded, chopped
  • 20.00 ml ground allspice
  • 16.00 gm brown sugar
  • 2 tsp dried thyme leaves
  • 4 Salmon Skin off Fillets
  • 500g fresh pineapple, peeled, cored, cut into 1cm pieces
  • 40.00 ml chopped fresh coriander
  • 21.00 gm fresh lime juice
  • Olive oil spray
  • Fresh coriander leaves, to serve
Instructions:
  • Blend shallot, chilli, allspice, sugar, and dried thyme in a food processor until smooth. Coat salmon evenly with the spice mixture in a glass or ceramic bowl. Marinate in the fridge for 15 minutes, covered.
  • Combine juicy pineapple, fragrant chopped coriander, and zesty lime juice in a vibrant bowl.
  • Preheat a barbecue grill or chargrill on high. Grill salmon for 3 minutes on each side until perfectly cooked. Plate the salmon, then garnish with flavorful pineapple salsa and fresh coriander leaves. Serve alongside crisp salad leaves.
