Caribbean jerk spiced chicken drumsticks, broiled for a spicy kick.
Ingredients:
  • 10 green onions (scallions), white and green parts, chopped
  • 1/2 habanero or Scotch Bonnet chile (or 3 serrano chilies), seeded and chopped
  • 2 tablespoons white wine vinegar
  • 1 tablespoon fresh thyme
  • 3 cloves garlic, chopped
  • 1 1/4 teaspoon ground allspice
  • 1 teaspoon kosher salt, plus more for additional seasoning
  • 1/2 teaspoon freshly ground pepper
  • 10 chicken dumsticks (3 1/2 lbs)
  • Extra virgin olive oil
Instructions:
  • Create a zesty chili paste by blending green onions, chilies, vinegar, garlic, thyme, allspice, salt, and pepper in a food processor until thick and smooth.
  • Enhance the chicken drumsticks with chili paste: Place the drumsticks in a spacious bowl and generously coat them with the fiery chili paste. Allow the flavors to mingle for 10 minutes.
  • 1. Preheat the broiler and adjust the oven rack to the center position. 2. Brush oil on the bottom of a broiler pan. 3. Place the drumsticks on the pan and season generously with salt.
  • To broil the chicken, cook it for about 10 minutes, turning once. Keep broiling until fully cooked and golden brown, approximately 20 minutes in total. To ensure even cooking, remove pieces as they finish cooking.
