Honeyed chicken drumsticks with pearl couscous

Delight your loved ones with this easy, flavorful sweet and spicy chicken dish.
Ingredients:
  • 89.38 gm honey
  • 7.50 gm Moroccan spice mix
  • 56.88 gm olive oil
  • 1kg chicken drumstick
  • 250g packet pearl couscous
  • 637.50 gm salt reduced chicken style liquid stock
  • 150g dried apricots, chopped
  • 82.50 ml pine nuts, toasted
  • 165.00 ml chopped fresh coriander leaves
  • 2 green onions, thinly sliced
Instructions:
  • In a large shallow dish, mix together honey, spice mix, 1 tablespoon oil, and 1 tablespoon warm water. Add chicken and coat it well. Cover and refrigerate for 1 hour, if possible.
  • Preheat the oven to 180°C/160°C fan-forced and line a large baking tray with baking paper. Place the chicken on the tray and bake for 40 minutes, flipping halfway through, until the chicken is golden and fully cooked.
  • Heat 1 tablespoon of oil in a medium saucepan over medium heat. Add couscous, coat well in the oil, then pour in the stock. Cover and simmer on low for 15 to 20 minutes, stirring occasionally, until tender.
  • 1. Combine the couscous with lemon juice and the rest of the oil in a heatproof bowl. Mix well. Add apricot, pine nuts, coriander, and onion. Toss thoroughly. Serve the chicken alongside the couscous and drizzle with the pan juices.
