Honeyed toffee apples

Spring fundraiser treats that will fly off the table.
Ingredients:
  • 430g (2 cups) caster sugar
  • 60ml (1/4 cup) honey
  • 250ml (1 cup) water
  • 125ml (1/2 cup) liquid glucose
  • Red food colouring (optional), to decorate
  • 10 (about 120g each) small dry red apples (such as Pink lady or Royal Gala)
Instructions:
  • Prepare a large baking tray by lining it with non-stick baking paper. Combine sugar, honey, water, and glucose in a medium saucepan over low heat, stirring until the sugar fully dissolves.
  • Position the sugar thermometer in the pan and bring the toffee to a boil. Lower the heat to medium and simmer without stirring, using a pastry brush dipped in water to brush down the sides of the pan occasionally. Cook for 20 minutes or until the sugar thermometer shows 150°C or reaches the "crack stage" (see tip). Let it sit until the bubbles settle. Add red food coloring, if preferred.
  • Insert a skewer or dowel into the core of each apple.
  • Dip 1 apple into toffee, ensuring it is fully coated, then place on the prepared tray. Repeat with the remaining apples. Allow to set and cool completely before serving.
