Chill poached pears in sauternes syrup for a refreshing dessert option.
Ingredients:
  • 375ml (1 1/2 cups) sauternes or other dessert wine
  • 100g (1/4 cup) honey
  • 2 cinnamon sticks
  • 4 pears, peeled, halved lengthways, cored
  • 60mls (1/4 cup) fresh lemon juice
  • 200g vanilla Fruche
  • 5.00 gm caster sugar
  • 1.25 gm ground cinnamon
Instructions:
  • In a large saucepan, mix sauternes, honey, and cinnamon sticks. Bring to a boil, then lower the heat and simmer for 2 minutes. Add the pears and simmer for another 5-8 minutes until tender when pierced with a skewer.
  • Transfer the pears from the saucepan to a dish using a slotted spoon. Combine lemon juice with sauternes syrup, then drizzle the mixture over the pears.
  • Using a slotted spoon, transfer the pear halves from the syrup to each serving bowl with the Fruche. Sprinkle a mixture of sugar and ground cinnamon on top. Drizzle a bit of the sauternes syrup around the pears before serving.
