Delicious chicken infused with zesty lime, warming ginger, aromatic thyme, spicy clove, and a hint of rum.
Ingredients:
  • 1.5 tablespoons fresh lime juice
  • 2 fluid ounces rum
  • 1 tablespoon brown sugar
  • 0.25 teaspoon cayenne pepper
  • 0.25 teaspoon ground clove
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 1 teaspoon black pepper
  • 0.5 teaspoon salt
  • 0.5 teaspoon dried thyme leaves
  • 1 (3 pound) whole chicken
  • 1 tablespoon vegetable oil
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C).
  • Mix together the zesty lime juice, flavorful rum, and rich brown sugar in a small bowl, and set aside the succulent sauce.
  • Combine the cayenne pepper, clove, cinnamon, ginger, pepper, salt, and thyme leaves to create a flavorful spice mix. Brush the chicken with oil and generously coat it with the spice mixture for an aromatic and well-seasoned dish.
  • Roast the chicken in a pan for 90 minutes until juices run clear or a meat thermometer reads 180°F when inserted into the thickest part of the thigh. Baste the chicken with the sauce every 20 minutes. Rest the chicken for 10 minutes before slicing.
