Slow-Cooker Jamaican Pork Roast

Slow cook pork roast with Jamaican spices and sweet heat all day for a delicious Caribbean flair. Bon appétit!
Ingredients:
  • 2 tablespoons vegetable oil
  • 3 1/2-pound pork boneless loin roast, trimmed of fat
  • 1 teaspoon salt
  • 1 small onion, finely chopped (1/4 cup)
  • 1 small red jalapeño chili, seeded and finely chopped
  • 2 cloves garlic, finely chopped
  • 1 tablespoon packed dark brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 2 teaspoons cider vinegar
  • 2 teaspoons chopped fresh thyme leaves, if desired
Instructions:
  • In a 12-inch skillet, heat oil over medium-high heat. Sear pork for about 10 minutes, turning occasionally, until golden brown on all sides. Season with salt to taste.
  • Add the pork to a 4- to 5-quart slow cooker, then combine all the remaining ingredients, except thyme, in a medium bowl and spread the mixture over the pork.
  • After covering, let the pork simmer on Low heat for 7 to 8 hours before generously sprinkling with fragrant thyme.
