Grilled Caribbean spiced pork tenderloin with homemade peach salsa.
Ingredients:
  • 0.75 cup fresh peaches, peeled and diced
  • 1 small red bell pepper, chopped
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons minced fresh cilantro
  • 1 tablespoon lime juice
  • 0.125 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar
  • 1 tablespoon Caribbean jerk seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 0.5 teaspoon seasoned salt
  • 1 pork tenderloin
Instructions:
  • Prepare a vibrant peach salsa by mixing ripe peaches, bell pepper, red onion, fresh cilantro, zesty lime juice, minced garlic, salt, and pepper in a bowl. Let the flavors meld together while you move on to the next step.
  • Mix together the olive oil, brown sugar, Caribbean jerk seasoning, thyme, rosemary, and seasoned salt in a small bowl. Massage the spice mix onto the tenderloin.
  • Prepare the outdoor grill by preheating it to medium heat and lightly oiling the grate.
  • Grill the tenderloin over high heat for 9 to 11 minutes with the lid closed. Turn and continue grilling until the center is slightly pink, about 9 to 11 minutes. Use an instant-read thermometer to check that it reaches 145°F (63°C). Rest the meat for 5 minutes, then slice and serve with peach salsa.
