Grilled Caribbean Pork Burgers

Spicy lime burgers with grilled onions and bread slices for extra flavor.
Ingredients:
  • 1 pound lean ground pork
  • 1 tablespoon grated lime peel
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon crushed red pepper
  • 1/4 teaspoon salt
  • 1 medium red onion, cut into 1-inch slices
  • 8 slices French bread, 1 inch thick
  • 1 tablespoon olive or vegetable oil
Instructions:
  • Prepare the grill by lightly greasing the rack with vegetable oil and heating it for direct heat using coals or a gas grill.
  • Combine all ingredients, leaving out the onion, bread, and oil. Form the mixture into 4 patties, each about 3/4 inch thick.
  • Grill the patties over medium heat for 15 to 18 minutes, turning once, until no longer pink in the center. In the last 8 to 10 minutes, grill the onion slices until golden brown. Brush the bread slices with oil and grill them for the last 2 to 3 minutes until golden brown.
  • Assemble the burger with onions between two slices of bread.
